TIGERNUT COOKIES

6-7 dl tigernut flour / 200g unsalted butter / 1 dl sugar
DIRECTIONS
1. Mix all ingredients in a bowl or a food processor. Be careful with the consistency – it should not be dry and crumbling, or sticky. Add more flour if the dough is sticky, or add more butter if it’s dry.2. (Optional) Refrigerate the dough in the refrigerator for 30 minutes. This makes it easier to handle.
3. Roll into balls and put them on a baking tray with baking sheet, flatten very lightly.
4. Bake in a 175 degree Celsius oven, for 8-15 minutes (different ovens = different times). They should be golden around the edges, but not brown. They burn easily, so be careful.
5. Let cool.
